Yummy BLT


Eric and I found some great veggie bacon called Fakin Bacon, made from Tempeh, and of course we had to try it in a BLT. We were surprised at how it had such a great smoky taste. It was also nice that we could eat bacon and not have to worry about the fat and cholesterol. We cooked it up in my new cast iron pan, which I highly recommend getting. I had some leftover Cilantro Lime Garlic Mayo that I made for lunch, so I threw it on the sandwich to make it a little more unique. Eric found a great peasant rye bread at the Co-op that is super soft and tasty, not like your typical rye. We also found some fresh corn on the cob, which made a nice light side dish. Once you get the water boiling you only have to cook the corn for 3 minutes. I used to think you had to cook it for 20 minutes, but I was definitely wrong. I learned that from my aunt and uncle, who learned it from the State Fair. This was a super easy dinner, that literately only took us maybe 10 minutes to make. So I hope that you try it out and let me know how it went!

BLT

Fakin bacon-4 slices
Peasant rye bread-4 slices
Mixed greens-1 cup
Tomato-sliced
Cilantro lime garlic mayo:
*1/2 cup of mayo
*2 cloves of garlic-pressed in garlic press
*Juice of 1/2 lime
*1/2 cup of cilantro-chopped

Cook the bacon on Medium for 2 minutes each side
Toast the bread:
*A trick I learned from Eric-Put two slices of bread in one slot in the toaster, that way the outside of the bread is soft for the roof of your mouth and the inside is toasted so your sandwich doesn't get soggy:)
Mix up the mayo with all the stated ingredients
Finally layer the sandwich and enjoy!
